How We Roast
The origin of the bean - where it came from, what the producers planned for it and its varietal - is incredibly important to us.
So we use responsible and transparent sources for our beans. We roast specialty coffee to make the most of each single origin bean that crosses our path.
This brings you closer to the place itself by highlighting the flavour and aroma that ascends from the terroir, producer and process used.

FAQs about how we roast
Do you do a dark roast?
We don't really roast dark...our philosophy is to bring out the intended flavour of single origin coffee beans.
The producers we use work to grow a product that has certain characteristics - a sense of place that brings layers of aroma and flavour. The darker you roast, the more you lose the original character of the bean.
Do you do a light roast?
Yes, we sometimes roast light.
We do a lot of profile roasts of the beans we purchase so we can get all the notes we're hoping for.
If that calls for a light roast to maintain sweetness, acidity and complexity, we'll definitely roast lighter.

I like strong coffee. What should I choose?
If you mean bold flavours in your coffee, then check out our Fruity & Bold coffees (green label) if you want something, well, bold.
But you'll get flavourful coffee no matter which you choose from us.

I'm brewing espresso / filter / french press / aeropress / etc. What should I choose?
Good question. We roast to the flavour of the bean - so we'd suggest that you look through what we have and find a flavour profile that you're looking for, rather than just on brewing method.
That said, our 'pink' label coffees are a bit more versatile - so should be delivering across a range of brewing methods.
Hold on though! The coffees we roast deliver across pretty much any brewing method - so all will reward you with something no matter how you brew!
I am looking for pre-ground beans. Do you sell your beans pre-ground?
We don't currently offer our beans pre-ground.
Why not you ask? A couple reasons...We would always encourage you to grind your beans just before you brew. Pre-ground beans lose flavour instantly so pre-ground beans wouldn't necessarily be giving you the best experience.
Second, we don't know how you brew. Or you might brew aeropress one day, then french press the next when friends come around.
Yes, there are rules-of-thumb, but every brewing method is different, and therefore call for different grind sizes.
Also, everyone's tastes are different, so we'd encourage you to grind fresh beans, but also grind to ensure you are brewing to the profile you find most enjoyable!
